The rolling boil method is in fact regarded as the only effective way to produce as traditional preserve. Maintaining the history of marmalade, famous the world over for it’s Scottish routes, Mackays is in fact the last producer from the Dundee area, ‘The Home of Marmalade’, and produces more varieties of orange marmalade than any other manufacturer. Mary Queen of Scots was one of the earliest fans of marmalade and was believed to have said during a bout of seasickness on a sailing from France to Scotland, that it was the sugary substance made from quinces that had eased her queasiness.
